Rescue Dinner with Produce-Packed Pizza

If your family is anything like ours, you’ve been cooped up lately with this silly little thing we call winter weather.
We’ve watched movies, popped popcorn, had marathon dance parties (a favorite right now is Sugar by Maroon 5), baked muffins, played in the snow, organized drawers, cancelled events and rearranged play dates.
While having extra family time is great, it also disrupts our normal routine. Sure, we go with the flow, but after a few days, it starts chipping away at our mood, our productivity and our patience. That’s when we all get what I call “the grouchies.” One easy way to combat the grouchies is to continue with regularly scheduled healthy meals and snacks for the family.
So how do I keep the peace when every member of the family wants something different? Often times, pizza comes to the rescue. Yes. I said pizza. Pizza is often the best vehicle to introduce a variety of foods into (or back into) the diet. Very few dishes combine vegetables, whole grains, lean protein, dairy, healthy fats and fruit into one delicious, healthy dinner that’s fit for the whole family.
