Curried Barley with Fruit
Ingredients
- 2 cups water
- 3/4 cup mixed Welch's dried fruits (berries or mixed)
- 2 teaspoons orange zest
- 2 teaspoons curry powder
- 2 teaspoons cumin
- 1-cup barley or brown rice
- 1 tablespoon chopped fresh parsley
Preparation
- Combine all the ingredients except the barley and parsley in a medium saucepan and bring to a boil.
- Add the barley, reduce the heat, cover, and cook until the barley is tender about 30 minutes.
- Serve. Sprinkle with parsley before serving.
