Curried Barley with Fruit

Ingredients

  • 2 cups water
  • 3/4 cup mixed Welch's dried fruits (berries or mixed)
  • 2 teaspoons orange zest
  • 2 teaspoons curry powder
  • 2 teaspoons cumin
  • 1-cup barley or brown rice 
  • 1 tablespoon chopped fresh parsley

Preparation

  1. Combine all the ingredients except the barley and parsley in a medium saucepan and bring to a boil.
  2. Add the barley, reduce the heat, cover, and cook until the barley is tender about 30 minutes.
  3. Serve. Sprinkle with parsley before serving.
