Fall Cranberry and Grape Glazed Tart

Ingredients

This not-too-sweet tart is a perfect end to a holiday meal. Double recipe for a large 11-inch tart.

  • 2 cups Welch’s Light Concord Grape Juice Beverage
  • 2 teaspoons cornstarch dissolved in 2 tablespoons water
  • 1 precooked 8-inch tart shell or prepared 8-inch graham cracker crust (cooled at room temperature)
  • 8 ounces light cream cheese, softened
  • ¼ cup sugar
  • ½ lemon, juiced
  • 2 cups fresh cranberries

Preparation

Place 2 cups of grape juice into a small saucepan and cook on medium high heat until reduced by half. Whisk in cornstarch mixture and boil for 1-2 minutes until sauce thickens. Add cranberries and cook until berries are softened (remove from heat if berries start to pop open); cool completely. Combine light cream cheese, sugar and lemon juice into a mixing bowl and beat until ingredients are fluffy and fully combined. Spread light cream cheese mixture into a cooled crust. Spoon cranberries and grape glaze on top of light cream cheese mixture; chill to set.
