Waffles with Blueberry-Maple Sauce and Vanilla Bean Yogurt

Ingredients

  • 2 whole-grain lowfat frozen waffles [used Eggos]
  • 1 cup Welch’s 100% Grape Juice made with concord grapes
  • 1 cup frozen or fresh blueberries
  • 2 tablespoons maple syrup
  • 1/4 cup Cabot Vanilla Bean Lowfat Greek-Style Yogurt

Preparation

  1. Heat waffles in oven or toaster.
  2. Meanwhile, in large skillet over high heat, bring grape juice to boil and cook for 5 minutes. Add blueberries and syrup and continue cooking until reduced and bubbling thickly, about 4 minutes longer.
  3. Spoon sauce over waffles and top with yogurt.
