Concord Grape Mousse
Ingredients
- 4 eggs, divided
- 1 cup Welch’s Grape Jam, divided
- 1/4 cup Welch’s Frozen Concentrated 100% Purple Grape Juice, thawed and undiluted
- 1 Tablespoon lemon juice
- 1 envelope unflavored gelatin
- 1/4 cup Welch’s 100% Purple Grape Juice made from Concord grapes, eady-to-drink
- 1 cup whipping cream, whipped
Preparation
- In the top of a double, combine 2 whole eggs, 2 eggs yolks (whites reserved), ½ cup jam, concentrated grape juice and lemon juice. Cook and stir over simmering water until mixture thickens slightly, about 2 minutes. Remove from heat.
- Soften unflavored gelatin in the ready-to-drink grape juice. Pour the gelatin into the cooked grape mixture to dissolve. Chill, stirring occasionally, until mixture just begins to set.
- With an electric mixer, beat reserved egg whites until soft peaks form. Fold the egg whites and the whipped cream into the grape mixture. Spoon into 6 individual dessert dishes; chill completely to set.
- Just before serving, warm remaining ½ cup of Welch’s Grape Jam. Spoon a little bit of the jam over each serving.
