Concord Grape-Nut Bread
Ingredients
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 6 Tablespoons chopped candied fruit
- 1/4 cup chopped walnuts
- 1 cup milk (1% fat)
- 1 egg
- 1/2 cup sugar
- 1 Tablespoon melted butter
- 1/2 cup Welch’s Grape Jam
Preparation
- Preheat oven to 350° F. Spray a 9 x 5-inch loaf pan with cooking spray.
- In a large mixing bowl, whisk the flour, baking powder, baking soda, salt, candied fruit and nuts together, set aside. In a medium bowl combine the milk, egg, sugar and melted butter and stir briefly. Pour the liquid ingredients into the dry ingredients and stir just until moistened.
- Scrape half the batter into the prepared loaf pan. Pour the Welch’s Grape Jam over the batter in a stripe lengthwise down the middle. Pour the remaining batter over the jam.
- Bake in the preheated oven for about 55 minutes. The bread will be done when a toothpick inserted into the center comes out clean. Cool the bread in the pan on a wire rack for 15 minutes before removing from the pan.
