Concord Grape-Nut Bread
Ingredients
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
6 Tablespoons chopped candied fruit
1/4 cup chopped walnuts
1 cup milk (1% fat)
1 egg
1/2 cup sugar
1 Tablespoon melted butter
1/2 cup Welch’s Grape Jam
Preparation
1. Preheat oven to 350° F. Spray a 9 x 5-inch loaf pan with cooking spray.
2. In a large mixing bowl, whisk the flour, baking powder, baking soda, salt, candied fruit and nuts together, set aside. In a medium bowl combine the milk, egg, sugar and melted butter and stir briefly. Pour the liquid ingredients into the dry ingredients and stir just until moistened.
3. Scrape half the batter into the prepared loaf pan. Pour the Welch’s Grape Jam over the batter in a stripe lengthwise down the middle. Pour the remaining batter over the jam.
4. Bake in the preheated oven for about 55 minutes. The bread will be done when a toothpick inserted into the center comes out clean. Cool the bread in the pan on a wire rack for 15 minutes before removing from the pan.
