Gingerbread

  • 1 cup fancy molasses
  • 1 cup hot water
  • ½ cup butter, softened
  • ¾ cup packed brown sugar
  • 1 egg
  • 2 ½ cups all-purpose flour
  • 2 tbsp ground ginger
  • 4 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ ground nutmeg
  • ½ tsp ground gloves

Gingerbread

  1. Preheat the oven to 325°F. Whisk the molasses with the hot water until smooth; cool slightly. Beat the butter with the brown sugar until fluffy. Beat in the egg and the molasses mixture (this mixture will appear split but will come together once the flour is added).

  2. In separate bowl, whisk flour with ginger, cinnamon, baking powder, baking soda, salt, nutmeg and cloves. Stir into the molasses mixture until combined.

  3. Scrape the batter into a greased and floured 9 x 5-inch loaf pan. Bake for 60 to 65 minutes or until a toothpick comes out clean when inserted into the center of the loaf. Transfer to a wire rack to cool completely.

Glaze

  1. Glaze: Combine the jam, butter and sugar in a small saucepan set over medium heat. Cook, stirring often, for 2 to 3 minutes or until sugar is dissolved and mixture is well combined. Spoon the glaze over the loaf; let stand for 10 minutes or until set.
